Rustic Crackers

INGREDIENTS:
- 2 tablespoons brown rice flour
- 2 tablespoons ground flax seeds
- 1 tablespoon chia seeds
- 1/3 cup sunflower seeds
- cup pumpkin seeds
- 1/3 cup hemp seeds
- 1 cup boiling water
- Freshly ground black pepper and salt to season

METHOD:
- Heat the oven to 180°C / 350°F / Gas Mark 4.
- Line an oven tray with baking paper.
- In a medium Denby bowl mix together all the dry ingredients together until well combined.
- Pour in the boiling water and stir so everything is well coated. Place a re-usable cover over the top and allow the mixture to absorb the water.
- Set to one side until the mix is thickened and sticky.
- Spread the mixture onto the baking tray, using a palette knife or spatula, trying to create a thin and even layer.
- Cook for approx 40 mins, until the crackers are browned and crispy.
- Let them cool completely, before breaking into rustic shapes, ready for your spring sharing platter
