Rustic Crackers

INGREDIENTS:

  • 2 tablespoons brown rice flour
  • 2 tablespoons ground flax seeds
  • 1 tablespoon chia seeds
  • 1/3 cup sunflower seeds
  • cup pumpkin seeds
  • 1/3 cup hemp seeds
  • 1 cup boiling water
  • Freshly ground black pepper and salt to season

METHOD:

  1. Heat the oven to 180°C / 350°F / Gas Mark 4.
  2. Line an oven tray with baking paper.
  3. In a medium Denby bowl mix together all the dry ingredients together until well combined.
  4. Pour in the boiling water and stir so everything is well coated. Place a re-usable cover over the top and allow the mixture to absorb the water.
  5. Set to one side until the mix is thickened and sticky.
  6. Spread the mixture onto the baking tray, using a palette knife or spatula, trying to create a thin and even layer.
  7. Cook for approx 40 mins, until the crackers are browned and crispy.
  8. Let them cool completely, before breaking into rustic shapes, ready for your spring sharing platter
