Chunky Guacamole

INGREDIENTS:

  • 3 ripe avocados
  • 1/2 small red onion, chopped
  • A handful of cherry tomatoes, finely chopped
  • 1 to 2 fresh red chillies, chopped and deseeded
  • 1 tablespoon olive oil 2 limes, juiced
  • Freshly ground black pepper and salt to taste
  • A good handful of fresh coriander, finely chopped

METHOD:

  1. Roughly chop the onion and deseeded chilli on a Denby breadboard.
  2. Prep the avocados, de-stone and scoop out the flesh onto the board.
  3. Start chopping it all together until well combined, leaving some of the avocado chunky.
  4. Roughly chop the coriander leaves and tomatoes into the mix, ensuring it’s all combined together.
  5. Pop the chopped mixture into a Denby bowl, add the juice of 1 lime and the olive oil, then season with freshly ground black pepper and salt to taste. Add more lime juice, if needed.
  6. Garnish with sliced chilli, sliced red onion and lime wedges.
  7. Perfect for dipping with fresh seasonal veg.
