Mexican Pulled Pork with Nachos

INGREDIENTS:

  • 1 to 2 packets of tortilla chips
  • 1 x Slow-cooked BBQ pulled pork, cooked as per packet instructions, shredded
  • 2 handfuls of grated chipotle chilli cheese
  • Spicy chilli mayonnaise, drizzled
  • 2 tablespoons pickled red onions, sliced
  • 2 tablespoons sliced pickled jalapeños chillis
  • A small handful fresh flat leaf parsley or coriander, roughly chopped

METHOD:

  1. Heat the oven to 200°C / fan 180°C.
  2. In a Denby small oblong dish, assemble the nachos at the bottom followed by the warm pulled pork and cheese.
  3. Place the dish in the oven and bake for 5-10 minutes until the cheese is melted and the chips are lightly browned.
  4. Remove the dish from the oven, sprinkle with the pickled onions, chillis and fresh herbs.
  5. Drizzle with spicy chilli mayonnaise and pour yourself a mint mojito. Enjoy!
