Mexican Pulled Pork with Nachos
INGREDIENTS:
- 1 to 2 packets of tortilla chips
- 1 x Slow-cooked BBQ pulled pork, cooked as per packet instructions, shredded
- 2 handfuls of grated chipotle chilli cheese
- Spicy chilli mayonnaise, drizzled
- 2 tablespoons pickled red onions, sliced
- 2 tablespoons sliced pickled jalapeños chillis
- A small handful fresh flat leaf parsley or coriander, roughly chopped
METHOD:
- Heat the oven to 200°C / fan 180°C.
- In a Denby small oblong dish, assemble the nachos at the bottom followed by the warm pulled pork and cheese.
- Place the dish in the oven and bake for 5-10 minutes until the cheese is melted and the chips are lightly browned.
- Remove the dish from the oven, sprinkle with the pickled onions, chillis and fresh herbs.
- Drizzle with spicy chilli mayonnaise and pour yourself a mint mojito. Enjoy!
