Easy One Pot Chickpea Curry

INGREDIENTS:
- 2 cans of chickpeas
- 1 large onion finally chopped
- 3 minced garlic cloves and thumb of ginger
- 1 chilli sliced
- Oil for cooking
- 2 small peeled cubed potatoes.
- Seasoning, 1 tsp cumin seeds, 1 tsp mustard seeds, 1 tsp salt, chillli powder, tumeric, garam masala, chat masala
- 1 tsp curry leaves
- 3 tbsp passata
- Half glass water
- Handful fresh coriander

METHOD:
- Warm up the cast iron pan, this allows you to temper the spices; cumin seeds, mustard seeds and curry leaves for a few minutes to release the spice aromas.
- Add oil and fry the onions for 3-4 minutes
- Add garlic, ginger and chilli and cook until brown.
- Add seasoning and cook for 1 minute before adding the passata.
- Add the potatoes and mix well,
- Add the drained chickpeas and water and gently simmer for 10-15 minutes until the potatoes and chickpeas soften.
- Optional; I like to mash my chickpeas a little so it mixes well into the sauce
- Check seasoning and garnish with coriander.
- Serve with rice or chapatti.
