Easter Bunny Biscuits

INGREDIENTS

  • 250g butter, softened
  • 140g caster sugar
  • 1 egg yolk
  • 300g plain flour
  • 2 teaspoons vanilla extract
  • Ready made icing to decorate

METHOD:

  1. Cream together the butter and sugar in a large bowl. Should be light and fluffy in texture.
  2. Add the egg yolk and vanilla extract and briefly beat to combine.
  3. Then gradually sift in the flour and stir until everything is well combined.
  4. Wrap the biscuit dough in a re-usuable food wrap and chill for an hour.
  5. Pre-heat the oven to 190ºC, 375ºF, Gas Mark 5.
  6. Lightly dust your surface with flour and roll out your dough to about 3mm thick.
  7. Use Easter cutters to create your biscuits and place on a baking tray lined with baking paper.
  8. Bake for 12-14 minutes or until golden brown. Let them cool.
  9. Decorate with ready roll icing to create your own Easter bunny biscuits. Yummy!
