Spring Green Dip

INGREDIENTS:

  • 1 avocado
  • 1 green pepper
  • 2 garlic cloves, peeled
  • 1/2 cup pistachios, shelled
  • A good handful of fresh parsley and coriander leaves
  • 1 lime, juice of
  • 1/2 cup olive oil
  • 1/2 cup water
  • Freshly ground black pepper and salt to taste

METHOD:

  1. Using a food processor, pulse all the ingredients until smooth.
  2. Store in the fridge in a covered Denby bowl until ready to serve.
  3. Perfect with seasonal veg for dipping on our spring sharing platter.
