Spring Green Dip

INGREDIENTS:
- 1 avocado
- 1 green pepper
- 2 garlic cloves, peeled
- 1/2 cup pistachios, shelled
- A good handful of fresh parsley and coriander leaves
- 1 lime, juice of
- 1/2 cup olive oil
- 1/2 cup water
- Freshly ground black pepper and salt to taste

METHOD:
- Using a food processor, pulse all the ingredients until smooth.
- Store in the fridge in a covered Denby bowl until ready to serve.
- Perfect with seasonal veg for dipping on our spring sharing platter.
