Coronation Feta & Spinach Rolls

INGREDIENTS:
- 1 pack of ready-made puff pastry
- 200g feta cheese, crumbled
- 400g spinach leaves
- 1 carrot, finely grated
- 2 small onions, peeled and finely sliced
- 2 garlic cloves, crushed
- Olive oil, a splash
- 1 egg, beaten
- 1 tablespoon cumin seeds
- A sprinkle of black sesame seeds

METHOD:
- Heat the oven to 190°C / 375°F / Gas Mark 5.
- In a frypan heat the olive oil and gently cook the onions and garlic until softened and translucent. Add the cumin seeds and carrot and continue to cook for a few minutes more.
- Pop the spinach in and stir as the leaves wilt and all the moisture has evaporated.
- In a large bowl combine the warm veg mix with the crumbled feta cheese. Put to one side.
- Dust your work surface with a little flour, and roll the ready-made puff pastry as per the instructions on the packet. Cut into 3 even lengths.
- Spoon the veg mixture into long lines and place in the middle of each long pastry shape.
- Using the beaten egg mixture, brush along one of the long edges. Fold the other side over the veg mix and press down firmly to secure.
- Cut into bite-sized rolls and glaze with the remaining egg wash. Sprinkle with seeds.
- Cook for approx 25 minutes until the pastry is puffed and golden brown.
