The goodness salad

INGREDIENTS:

  • 150g kale, stalks removed
  • 1 tin chickpeas, drained
  • 1tbsp olive oil
  • ¼ tsp smoked paprika
  • 50g fresh baby spinach
  • 1 packet radishes
  • 5 spring onions, chopped
  • 1 large avocado, stoned, peeled and roughly chopped
  • 4 tbsp extra virgin olive oil
  • 1 garlic clove, crushed
  • Juice of 1 lemon
  • 1tsp Dijon mustard
  • 2tsp black sesame seeds

METHOD:

  1. First make the dressing by mixing the olive oil, garlic, lemon juice, Dijon mustard and season with salt and milled pepper. 
  2. Wash and dry the kale then toss into the dressing. Leave for 15 minutes whilst you chop the rest of the ingredients. 
  3. In a frying pan add the olive oil and cook the chickpeas until they start to char. Add the smoked paprika and toss so all the chickpeas are coated, add to the kale. 
  4. Add the remaining salad ingredients and mix well. Arrange into a serving bowl ready for the table.
