Quinoa avocado and spinach salad with orange

INGREDIENTS:
- 150g tri colour quinoa (or plain if that is what you have)
- 1 large avocado, peeled
- ½ fennel head, finely sliced
- Handful baby leaf spinach
- 10 cherry tomatoes, halved
- 2 oranges peeled
- 2tbsp olive oil
- Small handful chopped parsley
- 1tbsp chopped dill

METHOD:
- Cook the quinoa according to the pack’s instructions. Once cooked leave to cool in a mixing bowl.
- Peel the oranges and segment over a bowl to keep all the juices. Add the orange segments to the quinoa and squeeze the leftover into a small mixing bowl.
- Stir the olive oil and a little seasoning into the orange juice.
- Add all the prepared salad ingredients to the cooled quinoa. Pour over the orange dressing add the herbs and mix well, Transfer to a serving bowl ready for the table.
