Mini stuffed picnic loaves

INGREDIENTS:
- 4 rustic round bread buns
- 12 slices of salami
- 1 mozzarella ball, drained
- 1 large tomato, sliced
- 2 roasted red peppers (from a jar)
- Handful spinach
- 12 basil leaves
- Olive oil

METHOD:
- Cut the top off the bread rolls and leave to one side. Hollow out the bread from the bread rolls so you are left with a bread bowl.
- Start layering your ingredients into the bread bowl, gently pressing as you add a new layer.
- Salami first, tomato, mozzarella, spinach, pepper and finally basil leaves. Drizzle over a little olive oil, pop the lid back on. Wrap tightly in clingflim, leave in the fridge for a couple of hours or overnight.
