Mini stuffed picnic loaves

INGREDIENTS:

  • 4 rustic round bread buns
  • 12 slices of salami
  • 1 mozzarella ball, drained
  • 1 large tomato, sliced
  • 2 roasted red peppers (from a jar)
  • Handful spinach
  • 12 basil leaves
  • Olive oil

METHOD:

  1. Cut the top off the bread rolls and leave to one side. Hollow out the bread from the bread rolls so you are left with a bread bowl. 
  2. Start layering your ingredients into the bread bowl, gently pressing as you add a new layer.
  3. Salami first, tomato, mozzarella, spinach, pepper and finally basil leaves. Drizzle over a little olive oil, pop the lid back on. Wrap tightly in clingflim, leave in the fridge for a couple of hours or overnight.
