Leftover Vegetable Frittata

INGREDIENTS:
- 5 eggs
- 50ml double cream
- 25g butter
- 2 garlic cloves ,sliced
- 300g leftover vegetables and potatoes, roughly chopped
- 75g cheddar cheese
- Handful of chopped herbs such as , parsley, chives, basil, sage
- Salt and milled pepper

METHOD:
- Pre-heat the grill to medium.
- In a roughly 20cm frying pan or skillet melt the butter over a medium heat. Add the vegetables and garlic, fry for 5 minutes until they start to crisp.
- In a bowl whisk together the eggs, cream, cheese and herbs with salt and freshly milled pepper.
- Pour over the vegetables, turn the heat down and leave for about 5 minutes until you can see it setting around the edge. Put the pan under the grill and cook for another 5 minutes until set on top.
- Serve straight away with crisp salad.
