Leftover Vegetable Frittata

INGREDIENTS:

  • 5 eggs
  • 50ml double cream
  • 25g butter
  • 2 garlic cloves ,sliced
  • 300g leftover vegetables and potatoes, roughly chopped
  • 75g cheddar cheese
  • Handful of chopped herbs such as , parsley, chives, basil, sage
  • Salt and milled pepper

METHOD:

  1. Pre-heat the grill to medium.
  2. In a roughly 20cm frying pan or skillet melt the butter over a medium heat. Add the vegetables and garlic, fry for 5 minutes until they start to crisp.
  3. In a bowl whisk together the eggs, cream, cheese and herbs with salt and freshly milled pepper.
  4. Pour over the vegetables, turn the heat down and leave for about 5 minutes until you can see it setting around the edge. Put the pan under the grill and cook for another 5 minutes until set on top.
  5. Serve straight away with crisp salad.
