Black Cherry Tiramisu

INGREDIENTS:

  • 10 lady finger biscuits
  • 2 tablespoons instant coffee
  • 200ml hot water
  • 1 jar Opie Cherries in kirch
  • 200ml double cream
  • 250g tub mascarpone cheese
  • 3 tbsp icing sugar
  • 1tsp vanilla extract
  • Cocoa powder

METHOD:

  1. Drain the cherries keeping the Kirsch liquid. 
  2. Into a bowl add the coffee and mix in the hot water to dissolve. Now add the liquid from the cherries.
  3. Snap the ladyfingers in half and dip into the coffee mixture for a couple of seconds then arrange in the bottom of the glasses. 
  4. Divide the cherries between the glasses, keeping 6 back to garnish. 
  5. In a mixing bowl beat the mascarpone, cream, icing sugar and vanilla until smooth and thick. 
  6. Spoon 2/3 of the mixture between the glasses. Using a small sieve top with a generous amount of cocoa powder. 
  7. Spoon the remaining cream mixture on top. Place the tiramisu’s in the fridge for 3-4 hours or overnight. 
  8. When you are ready to serve sprinkle over more cocoa powder and add the reserved cherry for garnish.
