White Bean & Lemon Dip

INGREDIENTS:
- 1 tin cooked cannellini beans, drained
- Half a lemon, juice and zest
- 1 garlic clove
- 2 tablespoons olive oil
- 2 tablespoons water
- Small handful of fresh flat leaf parsley, chopped
- Freshly ground black pepper and salt to season

METHOD:
- Combine the cannellini beans, lemon, garlic, olive oil and seasoning in a food processor.
- Mix slowly and add the water to get your desired consistency.
- Add the chopped parsley and more lemon juice or seasoning if required.
- Delicious served with bruschetta and a topping of garden peas or broad
