White Bean & Lemon Dip

INGREDIENTS:

  • 1 tin cooked cannellini beans, drained
  • Half a lemon, juice and zest
  • 1 garlic clove
  • 2 tablespoons olive oil
  • 2 tablespoons water
  • Small handful of fresh flat leaf parsley, chopped
  • Freshly ground black pepper and salt to season

METHOD:

  1. Combine the cannellini beans, lemon, garlic, olive oil and seasoning in a food processor.
  2. Mix slowly and add the water to get your desired consistency.
  3. Add the chopped parsley and more lemon juice or seasoning if required.
  4. Delicious served with bruschetta and a topping of garden peas or broad
