Pistachio Granola

INGREDIENTS:
- 100g pistachios, shelled
- 100g flaked almonds
- 50g coconut flakes
- 50g dried cranberries
- 50g dates, chopped
- 2 tablespoons vegetable oil
- 2 tablespoons honey
- 125ml maple syrup
- 2 tablespoons ground pistachios
- Pear halves in natural juice and yoghurt, for serving

METHOD:
- Heat the oven to 150°C / 300°F / Gas Mark 2.
- Prepare two baking trays by lining with baking paper.
- In a large bowl, mix the vegetable oil, honey and maple syrup.
- Add in the oats, pistachios and almonds, stir well to combine.
- Spread the mixture over the two baking trays and bake in the oven for 15 minutes.
- Add the dried cranberries, chopped dates and the coconut flakes to the tray and bake for a further 15 minutes.
- Serve in Denby bowls with pear halves, natural yoghurt and a sprinkle of ground pistachios. Enjoy!
