Prawn And Advocado Cocktails

INGREDIENTS:
- 1 Romaine or Cos lettuce, washed and sliced
- 2 ripe avocados
- 2 limes, 1 squeezed, the other cut into wedges
- freshly ground black pepper
- 10cm piece cucumber, chopped
- 150g large cold water prawns
- few sprigs fresh coriander
- 1 tbs soured cream or crème fraiche

METHOD:
- Prepare the lettuce and divide between the glasses
- Peel and slice the avocados and squeeze over the juice from one of the limes, turning them to coat evenly to stop the avocado from going brown. Season with a little pepper
- Mix the cucumber with the prawns and coriander then add the avocado. Pile into the glasses and finish with a dollop of soured cream and a wedge of lime
