Prawn And Advocado Cocktails

INGREDIENTS:

  • 1 Romaine or Cos lettuce, washed and sliced
  • 2 ripe avocados
  • 2 limes, 1 squeezed, the other cut into wedges
  • freshly ground black pepper
  • 10cm piece cucumber, chopped
  • 150g large cold water prawns
  • few sprigs fresh coriander
  • 1 tbs soured cream or crème fraiche

METHOD:

  1. Prepare the lettuce and divide between the glasses
  2. Peel and slice the avocados and squeeze over the juice from one of the limes, turning them to coat evenly to stop the avocado from going brown. Season with a little pepper
  3. Mix the cucumber with the prawns and coriander then add the avocado. Pile into the glasses and finish with a dollop of soured cream and a wedge of lime
