Chunky Guacamole

INGREDIENTS:
- 3 ripe avocados
- 1/2 small red onion, chopped
- A handful of cherry tomatoes, finely chopped
- 1 to 2 fresh red chillies, chopped and deseeded
- 1 tablespoon olive oil 2 limes, juiced
- Freshly ground black pepper and salt to taste
- A good handful of fresh coriander, finely chopped

METHOD:
- Roughly chop the onion and deseeded chilli on a Denby breadboard.
- Prep the avocados, de-stone and scoop out the flesh onto the board.
- Start chopping it all together until well combined, leaving some of the avocado chunky.
- Roughly chop the coriander leaves and tomatoes into the mix, ensuring it’s all combined together.
- Pop the chopped mixture into a Denby bowl, add the juice of 1 lime and the olive oil, then season with freshly ground black pepper and salt to taste. Add more lime juice, if needed.
- Garnish with sliced chilli, sliced red onion and lime wedges.
- Perfect for dipping with fresh seasonal veg.
