Baby jacket potatoes, roasted with cumin and filled with leftover sprout slaw

INGREDIENTS:

  • Small Potatoes suitable for baking
  • Leftover Sprout Slaw (see recipe here)

METHOD:

  1. Roast some baby jacket potatoes until just cooked with a little sea salt. 
  2. Cut open as you would with a jacket potato and fill with the leftover sprout slaw.
