Quinoa avocado and spinach salad with orange

INGREDIENTS:

  • 150g tri colour quinoa (or plain if that is what you have) 
  • 1 large avocado, peeled
  • ½ fennel head, finely sliced
  • Handful baby leaf spinach
  • 10 cherry tomatoes, halved
  • 2 oranges peeled 
  • 2tbsp olive oil
  • Small handful chopped parsley
  • 1tbsp chopped dill

METHOD:

  1. Cook the quinoa according to the pack’s instructions. Once cooked leave to cool in a mixing bowl. 
  2. Peel the oranges and segment over a bowl to keep all the juices. Add the orange segments to the quinoa and squeeze the leftover into a small mixing bowl. 
  3. Stir the olive oil and a little seasoning into the orange juice. 
  4. Add all the prepared salad ingredients to the cooled quinoa. Pour over the orange dressing add the herbs and mix well, Transfer to a serving bowl ready for the table.
