King Prawn & Spicy Slaw Sandwich

INGREDIENTS:
- 1 pack of cooked large king prawns
- Half a small red onion, finely sliced
- Half a small green cabbage, finely sliced
- 2 tablespoons of burger pickle or similar
- 2 tablespoons of sriracha mayonnaise or similar
- 1 sourdough baguette stick
- Freshly ground black pepper and salt to taste

METHOD:
- Mix the red onion and cabbage in a large Denby bowl and season with salt and pepper. Set to one side.
- Cut the ends off the baguette and slice in half. Turn both sides upright and spread mayonnaise onto one side of the baguette.
- Layer with the slaw and top with the prawns.
- Spread the remaining half of baguette with sriracha mayonnaise and close the sandwich. Cut into 3 equal portions and set to one side.
- Wrap in reuseable sandwich wraps and tie with string.
