King Prawn & Spicy Slaw Sandwich

INGREDIENTS:

  • 1 pack of cooked large king prawns
  • Half a small red onion, finely sliced
  • Half a small green cabbage, finely sliced
  • 2 tablespoons of burger pickle or similar
  • 2 tablespoons of sriracha mayonnaise or similar
  • 1 sourdough baguette stick
  • Freshly ground black pepper and salt to taste

METHOD:

  1. Mix the red onion and cabbage in a large Denby bowl and season with salt and pepper. Set to one side.
  2. Cut the ends off the baguette and slice in half. Turn both sides upright and spread mayonnaise onto one side of the baguette.
  3. Layer with the slaw and top with the prawns.
  4. Spread the remaining half of baguette with sriracha mayonnaise and close the sandwich. Cut into 3 equal portions and set to one side.
  5. Wrap in reuseable sandwich wraps and tie with string.
