Grilled Asparagus with lemon butter

INGREDIENTS:

  • 2 bunches asparagus
  • 50g butter
  • Zest of 1 lemon

METHOD:

  1. Bring a large pan over water to the boil. Cook the asparagus for 2 minutes then refresh in cold water. 
  2. Melt the butter in a small saucepan. Mix in the lemon zest and a little salt and milled pepper. 
  3. Brush the asparagus with some of the butter and then cook on the bbq, turning every so often for about 4-5 minutes.
  4. Place onto a serving plate and spoon over more of the lemon butter before serving.
