Vegan Mince Pie Crackers

INGREDIENTS:

METHOD:
- Cut the vegan filo pastry into square shapes and brush each of them with melted coconut oil, 2 at a time.
- Place a small spoonful of the homemade mincemeat diagonally across one corner of the pastry.
- Fold in the edges of the pastry and roll up.
- Place the filled roll diagonally onto the corner of another square and roll up.
- Pinch in the ends to make a cracker shape. Place on a baking tray and bake at 180 C fan/200 C conventional/Gas 5 for 10 minutes or until lightly golden.
- Allow to cool slightly and then dust with coconut sugar and serve.
