No Bake Energy Balls

INGREDIENTS:
- 1 cup of rolled oats
- 2/3 cup of desiccated coconut
- 1/2 cup of peanut butter
- 1/2 cup of ground flaxseed
- 1/3 cup of honey
- 1 teaspoon of vanilla extract
- Optional extra toppings chocolate chips, desiccated coconut, pistachio crumb

METHOD:
- In a large mixing bowl stir all the ingredients together until thoroughly combined.
- Cover the bowl and pop in the fridge for a couple of hours. This will make the mixture stick together better.
- Roll into small balls, approximately 1” diameter. And decorate with extra toppings of your choice.
- Eat straightaway or store in the fridge in a sealed container for up to a week.
