No Bake Energy Balls

INGREDIENTS:

  • 1 cup of rolled oats
  • 2/3 cup of desiccated coconut
  • 1/2 cup of peanut butter
  • 1/2 cup of ground flaxseed
  • 1/3 cup of honey
  • 1 teaspoon of vanilla extract
  • Optional extra toppings chocolate chips, desiccated coconut, pistachio crumb

METHOD:

  1. In a large mixing bowl stir all the ingredients together until thoroughly combined.
  2. Cover the bowl and pop in the fridge for a couple of hours. This will make the mixture stick together better.
  3. Roll into small balls, approximately 1” diameter. And decorate with extra toppings of your choice.
  4. Eat straightaway or store in the fridge in a sealed container for up to a week.
