Floral Eton Mess

INGREDIENTS:

  • Packet of meringues
  • 250ml double cream
  • 5tbsp icing sugar
  • Strawberries
  • 3tbsp sugar
  • Edible flowers for serving

METHOD:

  1. Slice the strawberries and place in a bowl with the sugar to macerate.
  2. Whip the cream and icing sugar until stiff peaks form, then crush the meringues.
  3. Add a spoonful of cream onto a serving plate or bowl and spread out. Add a handful of crushed meringue and some strawberries then add some more cream.
  4. Repeat and then sprinkle on the edible flowers to serve.
