Orange & Poppy Seed Cake

INGREDIENTS:

  • 250g plain flour
  • 1 and 1/2 teaspoons baking powder 
  • 250g unsalted butter, at room temperature
  • 200g golden caster sugar
  • 3 eggs
  • 2 oranges, juice of
  • 4 oranges, zest of
  • 50g poppy seeds

METHOD:

  1. Heat the oven to 180°C / 350°F / Gas Mark 4.
  2. Grease your loaf tin and line with baking paper.
  3. Cream together the butter and sugar until light and fluffy, either by hand or using an electric mixer.
  4. Add the eggs, one at a time, mixing well.
  5. Pour in the flour and baking powder, followed by the orange juice,zest and poppy seeds. Ensure everything is thoroughly combined.
  6. Bake for 50 - 60 mins until the top is golden and the cake is springy to the touch.
  7. Let the cake cool completely before decorating on a Denby platter. We used orange butter cream, candied orange slices and edible flowers.
